Wrapping Up B&B “Breakfasts”

All of September, we celebrated National Breakfast Week with great new recipes submitted by our Michigan-member innkeepers. These are delectable delights that didn’t quite fit into the breakfast category or arrived a little late — but are too scrumptious not to share. Enjoy!

Just fill wine glasses with cantaloupe, honey dew or any type of melon balls. Then drizzle champagne over the fruit, filling the glass half full. Top with a mint leaf. Super simple! For a non-alcoholic version, substitute ginger ale.


Claire’s Light Multi-Grain Pancake Mix

In keeping with our philosophy of healthy indulgence, I wanted a pancake recipe that both tasted good, was good for you--and a snap to mix up. So often multi-grain pancakes are heavy, dense and bland, so I played around with several different recipes until I created a blend I liked. Our guests tell us these pancakes "taste too good to be good for you"! I make the mix up ahead of time and always have it ready to go.

In keeping with At Willow Pond B&B’s philosophy of healthy indulgence, the innkeeper wanted a pancake recipe that both tasted good, is good for you–and is a snap to mix up. So often multi-grain pancakes are heavy, dense and bland, but guests say these pancakes “taste too good to be good for you!” Claire makes the mix up ahead of time and always has it ready to go.

We needed a savory gluten-free recipe for one guest and an "I-don't-want-to-see-an-egg"entree for another guest. Fortunately it was summer, and the farmer's market had an abundance of fresh veggies and some cute little redskin and white potatoes. We named the dish in honor of a couple from Wyoming, where he was with the Air National Guard

Innkeepers are regularly challenged by guests with special dietary needs and wants. One morning, Adventure Inn B&B needed a savory gluten-free dish for one guest and a “no eggs” entree for another. Fortunately it was summer, and the farmer’s market had an abundance of fresh veggies and some baby redskin and white potatoes. Thus was born the Wyoming Breakfast Skillet, gluten free and egg free, named in honor of one of the couples visiting from Wyoming.

Michigan B&Bs: It’s Not Just What You Eat — But Where You Eat It!

Breakfast at home is often catch as catch can: a cup of coffee in one hand and a cereal spoon in the other. But breakfast at a B&B is an experience to savor….. to linger over: fresh fruits you rarely buy for yourself, cloth napkins and place mats that match, real china and sturdy, often elegant flatware — no plastic here. The table almost always has fresh flowers at its center, and the dining room sparkles in a mix of cleanliness and light. The mood is relaxed. The food is delicious. Pictures tell the story best.

Michigan B&Bs don’t just serve up a mean muffin: they fresh bake their breakfast breads every day. Each batch is designed to delight their overnight guests, who enjoy their first meal of the day “on the house” as part of their stay. Their stay also includes complimentary sodas and assorted beverages, coffees and teas and “bottomless” cookie jars. You can talk about food all you want, but the next best thing to eating it is seeing it. Enjoy these bountiful breakfast entrees offered by our Michigan bed and breakfast inns.

Apples naturally make us think of a sweet flavor, but the seasoning combination brings a more savory flavor to the table at Victoria Resort.

This past fall, Victoria Resort B&B owner Jan Leksich was stocking up at a local farm stand when she spotted a recipe for a quiche made with apples. Intrigued, she brought it back to her team of innkeepers who quickly added their own magic. First, they started with a homemade crust. Then they taste tested. They voted to change the onion component, add some sage, exchange the Swiss for sharp cheddar –and a week later the final recipe was ready for guests. The guests’ vote? Delicious!

At Willow POnd breakfast entreeNowhere is breakfast fresher than At Willow Pond B&B, located in the heart of Amish country midway between Grand Rapids and Lansing. The peppers are from their garden. The eggs are from their chickens who have their own following on the inn’s Facebook page. The toast is from a homemade light honey-banana whole wheat, and you can find the recipe right here in our online cookbook. The bacon is “Walnut Creek” from the Country Pantry, a Mennonite store in the nearby village of Sheridan, where the innkeepers vie with horse and buggies for a parking space.

Bountiful Kingsley House Creme Brulee French Toast

You can make the Kingley House Creme Brulee French Toast yourself. It will look like this and taste fabulous.

Creme Brulee French Toast was a menu favorite at Kingsley House B&B even before the new owners purchased the inn last year. It’s so good, they kept it for the pleasure of those staying with them in Fennville, just minutes from the Lake Michigan shore. Adapted from a recipe in Epicurious that was later shared by a B&B in Maine, innkeepers Chris and Brenda Brzys often serve it with maple-glazed smoked sausage Chris prepares on his smoker. To taste it, either give yourself the gift of a getaway at Kingsley House, or fix it yourself using the recipe shared once again — with you.

Kingsley House Creme Brulee French Toast

  • 1 stick (1/2 cup) unsalted butter
  • 1 cup packed brown sugar
  • 2 tablespoons corn syrup
  • an 8- to 9-inch round loaf country-style bread (We like to use challah bread)
  • 5 large eggs
  • 1 1/2 cups half-and-half
  • 1 teaspoon vanilla
  • 1 teaspoon Grand Marnier
  • 1/4 teaspoon salt

Preparation
In a small heavy saucepan melt butter with brown sugar and corn syrup over moderate heat, stirring, until smooth and pour into a 13- by 9- by 2-inch baking dish. Cut six 1-inch thick slices from center portion of bread, reserving ends for another use, and trim crusts. Arrange bread slices in one layer in baking dish, squeezing them slightly to fit.

In a bowl whisk together eggs, half-and-half, vanilla, Grand Marnier, and salt until combined well and pour evenly over bread. Chill bread mixture, covered, at least 8 hours and up to 1 day.

Preheat oven to 350° F. and bring bread to room temperature. Bake bread mixture, uncovered, in middle of oven until puffed and edges are pale golden, 35 to 40 minutes. Serve hot French toast immediately.

Makes 6 servings.

Variety is the Spice of Michigan B&B Breakfasts

If you think “ho hum” when breakfast crosses your mind, you’ve not spent much time at Michigan B&Bs where the second “B” stands for “Breakfast.” The creative product of innkeepers’ kitchens are as varied as the bed and breakfast inns themselves.

House on Hill Combination FruitStarters are a specialty at The House on the Hill B&B in Ellsworth, where Innkeeper Marci aspires to take the ho hum out of fresh fruit. Topside, watermelon balls nestle in their own boats, served with raspberry sorbet and sprigs of fresh mint. Below, pears smothered in a rich rum raisin sauce are topped by star anise, just for pretty.

Innkeeper Greg is the masterful chef at Bear Lake B&B in Bear Lake, just north of Manistee on US-31. Like Marci, his starter specialty is fruit. But he stuffs his fruit — fresh berries in summer or fresh-frozen in winter –inside his own handmade pastry for a sweet and crunchy start to breakfast he simply calls “summer berry stuffed pastry.”

Castle in the Country B&B Inn, in the countryside just outside Allegan, serves Castle Royal Eggs & Cheese once a week to rave reviews. It is a guest favorite. Innkeeper Herb’s recipe serves six, and you can try making it yourself at home.

Castle Royal Eggs

Ingredients for Royal Eggs
2 C Grated Cheddar Cheese
1 Small Sweet Red Pepper
½ T Dried Herbs d’ Provence
1 Medium Red potato
6 Eggs
1 C Heavy Cream
½ t Ground Black Pepper

Preparation
Small dice the red pepper, then fold pepper, cheese and herbs together in a bowl. Place about 1/3 C of the cheese mixture in each of greased 6 ramekins. Slice the red potato thin and place a layer on top of the cheese mixture. Gently whisk the eggs, heavy cream, and black pepper together and pour over all. Bake at 400 degrees for 25-30 minutes or until the center is firm. Serve immediately.

Herb tops his with Hollandaise sauce to add a little more richness and creaminess. He cautions that if you add salt to taste, remember the cheese provides salt as well.
