Blueberry Citrus Muffins

Measurements and Ingredients
1/2 cup butter
1/2 cup sugar
2 cups flour
3 teaspoons baking powder
¼ teaspoon salt
1/3 cup milk
1 cup blueberries
Rind of one lemon or lime, finely grated
Preheat oven to 350 degrees. Spray muffin cups with nonstick cooking spray.
Cream butter, sugar and eggs in a small bowl.
In large bowl, combine flour, baking powder and salt.
Add creamed mixture alternately with flour mixture and milk until mixed. Fold in blueberries and lemon or lime rind.
Fill muffin cups 2/3 full. Bake for 25-30 minutes.
Cook Time: 25 to 30 minutes
Yields: 12 muffins
