Flourless Oatmeal Peanut Butter Cookies

These cookies get raves from our guests and lots of requests for the recipe. They are great for the health-conscious people wishing to avoid white flour. Trying
to keep them in the cookie jar and away from my husband is the challenge. -- April Tubbs, Adrounie House

Measurements and Ingredients
1 3/4 cups peanut butter
1/2 cup butter, softened
1 cup sugar
1 cup packed brown sugar
3 eggs
1 teaspoon vanilla extract
4 1/2 cups old fashioned oatmeal
2 teaspoons baking soda
1 cup semi-sweet chocolate chips
1 cup dried cherries
1 cup chopped walnuts

Instructions
Preheat oven to 350 degrees.
In a large mixing bowl, cream peanut butter, butter and sugars.
Add eggs one at a time, beating well after each addition. Beat in vanilla.
In a medium bowl, combine oats and baking soda. Gradually add oats and baking soda to the creamed mixture.
Stir in chips, cranberries or cherries and walnuts.
Drop by heaping tablespoon 2 inches apart onto ungreased baking sheets.
Bake for 12-14 minutes.
Adjust baking time for crispy or moist cookie.
Remove to wire racks or brown paper bag sheets to cool.




Tips and variations
You can substitute cranberries for cherries

Cook Time: 12-14 minutes
