"Cute" little lemon rolls are a yummy favorite at Dutch Colonial Inn.
Measurements and Ingredients
6 tsp lemon rind (zest of 2 lemons)
½ cup sugar
12 Rhodes dinner rolls
¼ cup melted butter
1 cup powdered sugar
1 Tbls. butter, melted
2 Tbls. fresh lemon juice
Spray baking dish the night before and set frozen dinner rolls inside. Cover with plastic wrap and put in refrigerator overnight. 3 hours before baking, pull out of refrigerator and cut in half. Mix lemon rind and sugar. Drizzle butter over rolls then top with lemon/sugar mixture (reserve half the mixture for just before baking). Cover with plastic wrap and set in warm place so they can rise til they’re double in size.
Sprinkle remaining mixture over top and bake at 350 degrees for 20-25 minutes. Remove immediately from pan and place on cooling rack. Combine glaze and drizzle over pull aparts.
Tips and variations
Rhodes Dinner Rolls can be found in the frozen bread dough section at most major groceries.
You can also prepare these little rolls the night before. Make them as listed, cover with plastic wrap and store in the refrigerator overnight. A couple of hours before you want to bake them, take them out of the refrigerator and let them rise. Bake as directed.
